There are many Chinese dishes that are famous all over the world and even they may not have been tasted by many people,people have heard of them.For example, Beijing Roast Duck or Peking Duck is the most delicious food Beijing has to offer. Eating Beijing Roast Duck is regarded as one of the two things you are supposed to do while visiting Beijing. The other one is climbing the Great Wall. The history of the roast duck can go back to as early as the Yuan Dynasty. Quanjude Roast Duck Restaurant is one of the famous restaurants that serve roast duck. The roast duck is prepared from a 3~4-month-old white Beijing duck. After cleaning, the cook half fills it with water and then places it in the oven ( 烤箱 ). It is cooked for about three-quarters of an hour. The cook usually brings the whole duck to the table and then takes it away to cut it into pieces. The simple eating procedure( 步骤) is as follows: Pick up a pancake in one hand and , using a section of scallion( 大葱 ) as a brush, paint some bean sauce on the pancake. Next, place the scallions in the center of the pancake, and with your chopsticks add a few pieces of duck,finally rolling it up.
